5 Stars - An Unforgettable Dining Experience at Makoto Sushi. Our dinner at Makoto Sushi was an absolute treat. The braised beef noodles were a standout dish, with their deep flavors and tender meat. The sushi was top-notch, featuring some of the freshest fish we’ve ever tasted. We were also blown away by the Wagyu beef selection, which was incredibly succulent. . Kira, our server, was exceptional, making our meal even more enjoyable with her attentive service and spot-on recommendations. If you’re in Vail, Makoto Sushi at the Grand Hyatt is a must-visit for a memorable dining experience. Highly recommended!

Combat Fisher - ⭐⭐⭐⭐⭐ 2025-1-21

We ate at Makoto Vail 3 times during our stay at the Grand Hyatt. What a wonderful restaurant. The seafood was surprisingly fresh (given we are nowhere near the sea), the dinner for New Years was a set menu and absolutely delicious. The other time we ate there, my kids ate a very late lunch there and just stayed throughout dinner. They were very good about it. By the way, the Dynamite hand roll is DELICIOUS !!! I think we ordered 8 of them the 3rd time we ate there :) Where ever we decide to stay in Vail next time, we will definitely want to include Makoto in plans.

This place has some of the best sushi rolls I've ever had. I love that they also offered the option of ponzu sauce, which I found to be less overpowering than soy sauce. This allowed you to really taste the flavors of each roll. The service was excellent, and the food was phenomenal--probably one of the best places I've had sushi. Every ingredient tasted so fresh that I didn't need to dip every roll in soy sauce or ponzu. We ordered the shrimp tempura uramaki, which was probably the best shrimp tempura roll I've ever had--so crispy! The spicy yellowtail uramaki, rainbow uramaki, and negi toro hosomaki were also delicious. For dessert, the Flaming Death Star was phenomenal. Not only did they light it on fire, but the unique flavors complemented each other perfectly! The ambiance was fabulous for a date night. We went during the walk-in timeframe, but be sure to make a reservation if you plan to visit for dinner
