Decided to come here last minute and I was glad we did. The sushi here is really good. We ordered Grilled Squid, Spicy Sashimi Salad, Sashimi Appetizer, Angry Salmon Roll and the Green Dragon Roll. The sashimi tasted very fresh. Both the rolls were also very good. It was not drenched in sauce like some other places. We ordered 3 other dishes (Kung Pao Delight, Chicken Drunken Noodles and Salmon Fried Rice) to go to try the different Chinese and Thai dishes. The Drunken Noodles had a hint of Chinese and missing a hint of Thai (the basil) so I'm guessing this is the Chinese version of the drunken noodles. The fried rice was okay, nothing special. Both dishes seems to have MSG, not enough to give me a headache but enough to make me thirsty. The Kung Pao was also okay because the sauce was a bit watery so it doesn't stick to the meat as much.

Ito Sushi Asian Bistro is the best sushi restaurant around Castle Rock. If you like sushi, I would recommend you to try their omakase. You will be surprised how fresh the fish is and the creativity of the dishes. All chefs are well-experienced and professional. The atmosphere of the restaurant is also good. This is a great restaurant to have dinner with friends, family and dates!

We accidentally found this place. The staff was very friendly, extremely helpful. I can imagine though parking might be problematic at times unfortunately. The restaurant was lit up bright and very clean. Each dish was prepared with love. The Toro was delivered to our table under a dome of smoke. The Sashimi Ceviche was out of this world. If you like Naruto rolls, they actually have a couple - one being the Denver Bomb Roll. The Never Try Never Roll should be tried as well. The menu is separated by each type of fish, and "fried" special rolls, special rolls. Take your time to read it - otherwise you might miss something.
